This program is designed for high school and vocational school graduates who want to start working in the hotel industry quickly, equipped with the skills the industry actually needs. During the program, you will:
- Master hotel operations through intensive practice in industry-standard laboratories, covering Food and Beverage Product, Room Division, and Food and Beverage Service.
- Build a professional attitude through grooming excellence, work ethics, and service excellence.
- Strengthen communication skills, including foreign languages, for an international work environment.
- Complete On the Job Training (OTJT) at starred partner hotels, gaining real work experience before graduating.

Semester 1
Front Office Operation HTL011 3 credits
Mahasiswa diharapkan memiliki pemahaman dan keterampilan mengenai kantor depan hotel (front office). Mahasiswa memahami tiga fungsi utama kantor depan, yaitu menjual kamar, menjaga keseimbangan akun tamu, memberikan layanan dan informasi kepada tamu.
Housekeeping & Laundry Operation HTL014 3 credits
Mahasiswa diharapkan memiliki pemahaman dan keterampilan housekeeping atau tata graha. Tata graha yang ada di dalam hotel yang menangani hal – hal yang berkaitan dengan keindahan, kerapian, kebersihan, kelengkapan dan kesehatan seluruh kamar, juga area – area umum lainnya, agar seluruh tamu maupun karyawan dapat merasa nyaman dan aman berada di dalam hotel.
Food & Beverage Service HTL015 3 credits
Mahasiswa diharapkan memiliki pemahaman dan keterampilan dalam pelayanan makanan dan minuman. Mata kuliah membahas konsep dan ruang lingkup tata hidang, personalia food and beverage service, perlengkapan tata hidang, penyiapan area restoran, penerapan pengetahuan menu hidangan dan etika dalam perjamuan makan, penerapan pelayanan makanan dan minuman (food and beverage service).
Beverage Knowledge HTL018 3 credits
Mahasiswa mendapatkan pengetahuan mendasar tentang jenis-jenis bahan baku dan produk minuman, baik yang beralkohol dan non-alkohol, pengetahuan baku tentang bahan baku dan produk kopi, teknik membuat dan berbagai proses pembuatan minuman untuk di bar, restoran dan hotel, pengetahuan operasional penyajian berbagai produk minuman tersebut.
Kitchen Operation HTL013 3 credits
Mahasiswa diharapkan memiliki pemahaman tentang dasar-dasar pengolahan makanan dan implementasinya. Praktik mencakup: Mise en Place pengolahan untuk daging, unggas, ikan, seafood dan sayuran. Menyiapkan stock dan saus dasar, menerapkan dan membandingkan berbagai metode pengolahan makanan, mampu membaca dan menganalisis teknik olah berdasarkan resep standar, dan mampu menggunakan peralatan dengan tepat sesuai dengan metode pengolahan.
Bakery & Pastry Operation HTL012 3 credits
Mahasiswa diharapkan memiliki pemahaman tentang berbagai kajian bahan, alat dan produk, serta prosedur pembuatan produk roti, cake, cookies, dan sejenisnya. Kajian bahan meliputi bahan dan fungsi bahan. bahan dasar, bahan tambahan, dan bahan pengembang. Kajian alat meliputi kualifikasi alat, penggunaan, dan perawatan. Kajian produk meliputi konsep dasar setiap produk, metode pembuatan, pembakaran dan kegagalan produk. Prosedur pembuatan terkait dengan membuat produk sesuai klasifikasi produk dengan mengacu resep.
Introduction to Hospitality & Tourism HTL016 2 credits
Mahasiswa mendapatkan pengetahuan dan pemahaman mengenai jenis, departemen, fungsi dan tipe hotel. Jenis-jenis industri pariwisata, tipe turis, industri keramahtamahan dan jasa lainnya, serta perkembangan industri pariwisata.
Psychology of Service BHI026 2 credits
Mata kuliah ini membahas tentang konsep dasar perilaku dan dinamika kepribadian konsumen, motivasi dan kebutuhan, pengembangan minat, membangun hubungan yang efektif/berkomunikasi, dan penanganan konflik serta melaksanakan perubahan dalam rangka meningkatkan pelayanan.
Basic English BHA001 2 credits
Mahasiswa diharapkan mempunyai kompetensi tentang aplikasi Bahasa Inggris, yaitu struktur bahasa (grammar), membaca (reading), menulis (writing), dan berbicara (speaking).
